Bought a pack last week, pulled off the skins, washed them with baking soda and put them in a pan with oil and vinegar (oil for health, vinegar to tenderize). Filled the pan 1/2 with water and let them stew, refilling the water occasionally. (This pan doesn't have a lid, so too much heat escapes and my chicken never gets fully cooked with conventional frying.) Otherwise went about my business for a couple of hours.
Pulled the chicken out and made gravy from the stock. Gravy over chicken. Cheap, easy, and fed me for a couple of days.
Unfortunately even with all that time stewing some of the thighs were still red near the bone, so this time I cut the bones out first as well as I could and threw them into a pot for stock. The chicken should cook fine now, but the new problem is, there's a lot of meat still stuck to the bones. Does anyone have a good technique for deboning raw chicken? The only alternative I can think of is to cook it bone in, then debone, then finish cooking. I could also bake the damn things I suppose, but I'm hoping someone here has advice.
